A true "Gugelhupf", a southern German and Austrian, but also Swiss term for a type of sponge ring known as a Bundt cake, consists of a soft yeast dough, which often has raisins added to it. A cake shaped like a hood – the "Gugelhupf" of past and present
The German term "Gugelhupf" is derived from the Middle High German word "Gugel", meaning hood, and we think that the cake certainly lives up to its name. By baking the cake in the tall Bundt cake pan, which also resembles a crown, the finished cake looks like a tall hat. In Germany as well as in Austria, the term "Gugelhupf" refers more to the shape of the cake than to the mixture itself. The original "Gugelhupf" is made from yeast dough, but all other mixtures baked in this distinctive baking pan bear this name. Today, simple pound cakes are often made in this pan, as well as walnut or marble cakes.
