Water quality
The water quality is essential for the preparation of your coffee specialties. Excessive calcium and chlorine will spoil the flavour. For this reason use the WMF water filter which will also protect your WMF1000 against deposits.

Warm-up flushing
After switching on the machine and after longer interruptions you should carry out the warm-up flushing. This way, the Espresso will reach its ideal temperature more quickly. Because one thing is essential for a good Espresso: It has to be hot.

Preheat cups
Use the heated cup tray to preheat your cups. In addition we recommend preheating with a portion of hot water.

The right cups
Use Espresso cups made from thick-walled porcelain which better store the heat caused by the preheating. They have a maximum capacity of 60 ml – but are filled to a maximum of two thirds – and they have a conical shape. Cups that are too large let the Espresso cool down at the surface too quickly.

Program the coffee flavour
Program coffee strength, water and milk quantity for single coffee specialties according to your taste.

Brewing temperature
The factory-set brewing temperature of 92°C is ideally matched to coffee with 100% Arabica beans. If you use coffee with contents of Robusta beans we recommend a reduction of the brewing temperature to 88°C.

Degree of milling
In addition to the quantity of coffee powder, the degree of grinding is essential for the formation of what we call body or richness of the coffee as well as the formation and consistence of the crema. The finer the coffee has been ground, the more the ingredients of the coffee will be solved. Adjust the degree of milling to the coffee variety used.

Quantity of coffee beans
Lose roast coffee will loose flavours within a few days. For this reason fill only the amount of beans into the coffee beans container which you will consume in the next days; it is wise to refill several times.

Storage
Store your coffee well sealed to save the flavour: in a cool dry and odourless place, since moistness and oxygen are the primary flavour killers.

Coffee variety
Coffee is rated by its properties like acid, flavour, body and odour. 100% Arabica does not guarantee a top quality. The premium coffee which you drink and serve depends on individual tastes.

Milk type
Milk froth is made from the protein content in the milk. Some high protein content in the milk promotes the quality and stability of the milk froth.

Cool the milk
Milk is a very sensitive food. We recommend using milk precooled in the refrigerator. After use put the milk back into the refrigerator. Do not continue to use milk which was standing without cooling for more than two hours.

Hygiene
When opening the milk pack and when handling with the milk hose you should mind an absolute cleanness. Unclean hands and tools can cause detrimental germs to get into the milk. Unopened UHT milk is usually free from detrimental germs.

Maintenance
A perfect coffee requires the regular maintenance of the WMF1000. Therefore you should carry out the appropriate maintenance programs when prompted via the display and carry out the manual maintenance regularly.

Cleaning of beans container
Coffee contains fats and oils depositing at the containers. These oils oxidise with oxygen affecting the coffee flavour very strongly. Therefore wipe out the beans container – periodically - depending on usage – using a dry lint-free cloth.

Latte Macchiato
Your Latte Macchiato will come out best, if after the half time of preparation you switch the milk lever from the mill position to the milk froth position.
