Bring water to a boil in a pot.
Cook the glass noodles according to the package instructions (usually 3-5 minutes) and then drain.

In a separate pot, blanch the edamame in boiling water for about 3-5 minutes until tender. Drain and set aside.

Fry the minced meat in a frying pan with a little oil. Add sesame seeds and finely chopped garlic and continue frying until the meat is cooked through.

In a separate frying pan, lightly sauté the shimeji mushrooms until golden brown.

Put all the ingredients for the savory smoothie – cucumber, garlic, lime juice, chilli, basil, galangal, soy sauce and maple syrup – in a blender and blend well until the mixture has a homogeneous consistency. Dilute with water or ice cubes if desired.

Add the glass noodles to a bowl as a base. Arrange the edamame, leaf mustard salad, seared minced meat, shimeji mushrooms and fresh spring onions on top.

Pour the savory smoothie over the bowl so that everything is well coated.
Garnish the bowl with the sorrel and sesame seeds and serve immediately.
