Asia Bowl with Cucumber and Basil Smoothie

  • Ingredients for the bowl:
  • 50 g Glass noodles
  • 100 g Edamame
  • 100 g Minced meat
  • 50 g Leaf mustard salad
  • 50 g Shimeji mushrooms
  • 1.5 Spring onions
  • Baby sorrel as decoration
  • Ingredients for the savory smoothie:
  • 0.5 Cucumber
  • 1 Garlic
  • Juice of 1 lime
  • 1 Chili
  • 1 bunch Basil
  • 5 g Galangal
  • 2 tbsp. Soy sauce
  • 1 tbsp. Maple syrup
  • As decoration:
  • Baby sorrel, sesame

Preparation

Schritt 1
Bring water to a boil in a pot. Cook the glass noodles according to the package instructions (usually 3-5 minutes) and then drain.

In a separate pot, blanch the edamame in boiling water for about 3-5 minutes until tender. Drain and set aside.

Fry the minced meat in a frying pan with a little oil. Add sesame seeds and finely chopped garlic and continue frying until the meat is cooked through.

In a separate frying pan, lightly sauté the shimeji mushrooms until golden brown.

Put all the ingredients for the savory smoothie – cucumber, garlic, lime juice, chilli, basil, galangal, soy sauce and maple syrup – in a blender and blend well until the mixture has a homogeneous consistency. Dilute with water or ice cubes if desired.

tbsp. Soy sauce
tbsp. Maple syrup
Schritt 6
Add the glass noodles to a bowl as a base. Arrange the edamame, leaf mustard salad, seared minced meat, shimeji mushrooms and fresh spring onions on top.
Schritt 7
Pour the savory smoothie over the bowl so that everything is well coated. Garnish the bowl with the sorrel and sesame seeds and serve immediately.
As decoration:
Baby sorrel, sesame
