Cider-Braised Quail with Apple and Kale

  • For the quail:
  • 4 Quails (cleaned)
  • 500 ml Cider
  • 2 Apples (e.g., Boskoop or Granny Smith, diced)
  • 1 Onion (chopped)
  • 2 Garlic (chopped)
  • 200 g Kale (washed and roughly chopped)
  • 2 tbsp. Olive oil
  • 2.5 Sprigs fresh thyme
  • 2.5 Fresh bay leaves
  • Salt and pepper to taste
  • For the roasted potatoes:
  • 500 g Baby potatoes (e.g., new potatoes, washed)
  • 2 tbsp. Olive oil
  • 1.5 tsp. Crushed coriander seeds
  • Salt and pepper to taste
  • For garnish:
  • Fresh herbs of your choice (e.g., thyme or parsley)

Preparation

Schritt 1
Preheat the oven to 200 °C (390 °F). Halve the potatoes and toss with olive oil, crushed coriander seeds, salt, and pepper. Spread on a baking tray lined with parchment paper and roast for 30–35 minutes until golden and crispy.

Schritt 2
Heat olive oil in a WMF Fusiontec® Mineral Pro pot. Brown the quail on all sides until golden, then remove and set aside. In the same pot, sauté the chopped onion and garlic until translucent.

Schritt 3
Add diced apples, cider, bay leaves, thyme, salt, and pepper to the pot. Return the quail to the pot, bring to a boil, then reduce heat and cover. Simmer for 30–40 minutes until the quail is fully cooked and tender.

In the last 10 minutes of cooking, stir in the chopped kale and let it wilt and soften.

Plate the cider-braised quail with the apple-kale mixture and the crispy roasted potatoes. Garnish with fresh herbs if desired.
