Leek & Sweet Potato Tarte Tatin

  • 2 Leeks
  • 4 Sweet potato (150g each)
  • 5 Garlic
  • 20 g Fresh oregano
  • 30 g Butter
  • 30 g Sugar
  • 125 g Goat cheese
  • Salt & pepper
  • 1 pkg. Puff pastry

Preparation

Étape 1
Cut the leeks into 2 cm wide pieces. Peel the sweet potatoes and cut them into 2 cm wide pieces as well. Roughly chop the garlic cloves. Pluck the leaves from the oregano.

Process the butter with the sugar into caramel in a pan. Melt the sugar in the pan over medium heat until it turns golden brown. Then gradually stir in the butter until fully melted and a thick mixture forms. Be careful not to burn the caramel. Remove from heat.

Evenly distribute the vegetables on the caramel in the pan and fill the gaps with garlic, oregano leaves, and goat cheese. Season everything well with salt and pepper, then cover with the puff pastry.

Place the pan in the preheated oven and bake for 30 minutes at 180°C.
Étape 5
After baking, invert the Tarte Tatin onto a large plate and serve.
