Preparation

Mix the olive oil, orange juice, orange zest, chopped chili, Thai basil, salt and pepper in a bowl. Cut the octopus arms into 2-4 pieces, depending on their length. Add the octopus pieces and mix well. Leave to marinate for at least 30 minutes.
Octopus' arms (cooked and as a whole arm)

Red chilies (depending on desired heat), finely chopped
handfulFresh Thai basil, roughly chopped

Carefully place the scallops in the marinade and only marinate for about 5-10 minutes. This will prevent them from becoming too soft.

Alternate the marinated octopus pieces and the briefly marinated scallops on the lemongrass stalks.

Preheat the grill. Place the skewers on the WMF table grill and grill for about 3-4 minutes on each side until the scallops are lightly browned and the octopus is warm.
