Petit Four with apple chips

Ingrédients

  • 2 Mildly sour apples (e.g. Glockenapfel, Holsteiner Cox)
  • 3 tbsp. Lemon juice
  • 3 tbsp. Maple syrup
  • 1 Chopped chili
  • Salt flakes
  • 2 Avocados
  • 1 Juice and zest of an organic lemon
  • Salt and pepper
  • 100 g Soft white cheese
  • A little pesto
  • Fresh shoots

Preparation

Étape 1
Core the apples as desired and slice finely or chop. Marinate with lemon juice and maple syrup, sprinkle with chili and salt flakes, and dry in an automatic dryer for approx. 9 hours.

Étape 2
Mash some of the avocado, leave the rest chunky. Season with the lemon juice and zest, salt and pepper. Mix in the soft white cheese until creamy and refine with pesto.
