Sweet risotto with berry ragout

Ingredients

  • 300 g Pudding rice
  • 750 ml Milk
  • 250 ml Coconut milk
  • 1 sticks 1 cinnamon stick
  • 1 Of lemon peel
  • 1 Vanilla pod
  • 1 bunch Mint
  • 100 g Pine nuts
  • 30 ml Lemon juice
  • 30 ml Honey
  • 1 Orange
  • 250 g Mixed berries (e.g., raspberries and blueberries)
  • 1 tbsp. Sugar

Preparation

Step 1
To begin, pour the milk and coconut milk into the pressure cooker pot. Add the pudding rice, cinnamon stick, lemon zest and slit vanilla pod. Bring the mixture to the boil, stirring constantly, close the lid and simmer for 15 minutes once it reaches cooking level 1. Then remove the cinnamon stick, lemon zest and vanilla pod.

Step 2
Toast the pine nuts in a frying pan without any fat, let them cool down, finely chop them with the mint leaves in a food chopper and mix with the lemon juice and honey to make a pesto.

Peel the orange and cut out the fillets using a sharp knife, collecting the juice in a bowl.

Mix the berries with a little sugar and the orange juice and leave to infuse briefly.
