Preparation
Step 1
Cube a seedless watermelon.
Place in a single row on a lined baking tray and freeze for a few hours or overnight.

Once watermelon is frozen add to a blender with coconut milk and blend on high speed (you can add optional sweetener or lime juice at this time as well).
Scrap down the sides occasionally and blend until the consistency is smooth. This might take 5-6 minutes.

Step 3
Enjoy immediately or store in a freezer-safe container and let thaw out before serving.
