The pressure cooker cooks food under a high pressure with the matching insert placed inside the steam. This preserves the flavour and nutrients during the cooking process and shortens cooking times. It lets the cooker perform its main function: the pot is hermetically sealed and placed under pressure. If it becomes clear that your lid is no longer closing completely tight and the pressure is not being built up – this will be noticeable if the valve pins are not rising – it is often useful to clean or replace the sealing ring.
