The more varied the WMF knife collections and individual models, the more diverse the requirements for sharpening the knives. In addition to different steels and knife sharpeners, there is also the whetstone. It is particularly well suited for sharpening Japanese knives, since the models in the Yari and Damasteel collections have particularly hard blades due to the way in which they are made. The WMF whetstone has two layers – a blue coarse grit (360) for pre-grinding and a white fine grit (1,000) for polishing. Wet the whetstone for 5 to 10 minutes before use. The plastic bowl in which the stone lays during grinding prevents water reaching the work surface and also provides a stable base. The WMF whetstone is 20 centimetres wide, 2.5 centimetres high and 5 centimetres deep – it fits perfectly into a kitchen drawer, where it is protected from dust and crumbs.
