Recipe for One Pot Pressure Cooker Perfect / Perfect Premium

Ingredients

4 People
  • 1 kg Potatoes
  • 300 g Leeks
  • 250 g Pineapple flesh
  • 200 g Cherry tomatoes
  • 100 g Unsalted cashew nuts
  • 70 g Massaman curry paste
  • 400 ml Vegetable stock
  • 400 ml Coconut milk
  • 60 ml Fish sauce / vegetarian oyster sauce
  • 2 Limes
  • 2 Red onions
  • 1 bunch Coriander
  • 15 ml Neutral vegetable oil
  • 1 Salt
  • 1 tbsp. Sugar

Preparation

Step 1
Peel the onions, cut into strips and marinade in the juice of the two limes with a pinch of salt and the sugar.

Step 2
Peel the potatoes, wash and cut into roughly 2 cm cubes. Clean the leeks, wash and cut into pieces roughly 1.5 cm thick. Also cut the pineapple into pieces.

Step 3
Roast the cashews in the pressure cooker without oil until golden-brown and remove. Add the oil, heat up and sauté the curry paste for 2-3 minutes. Add the potatoes, leeks and tomatoes and pour over the stock and coconut milk. Close the lid, heat up and cook for 5 minutes after reaching cooking level 2.

Step 4
Release steam from the pot and open. Season the curry with fish sauce and salt and place into bowls. Serve with fresh coriander, cashews and the pickled onions.
