Recipe for One Pot Pressure Cooker Perfect / Perfect Premium

Ingredients

  • For the risotto:
  • 250 g Risotto rice
  • 4 Garlic
  • 75 ml Olive oil
  • 1 bunch Sage
  • 1 Onion
  • 200 ml White wine
  • 1 tsp. Saffron
  • 400 ml Vegetable stock
  • 2 sprigs Thyme
  • 1 Bay leaf
  • 60 g Parmesan
  • 1 Organic lemon
  • 50 g Butter
  • Salt, pepper for seasoning

Preparation

Step 1
Peel the garlic and cut into thin slices. Heat the oil in the pressure cooker. Fry the slices of garlic and the sage until crispy and then remove.

Peel the onions, cut into fine cubes and steam in the same oil for 3 minutes. Then add the rice, briefly sauté and deglaze with the wine.

Add the saffron, vegetable stock, thyme leaves and bay leaf. Close the lid on the pressure cooker and cook everything for 6 minutes after reaching cooking level 1.

In the meantime, grate the Parmesan cheese. Zest the lemon and squeeze out the juice.

Let the steam out of the pressure cooker and remove the lid. Stir the butter and half of the Parmesan in the risotto. Season with salt, pepper and zest, and if necessary stir in some water.

Arrange the risotto onto plates and serve with the rest of the Parmesan, the fried garlic and the sage.
