Ingredients

4 People
  • 4 Fresh figs (large)
  • 500 ml Quince juice
  • 1 sprigs Rosemary
  • 6 Black peppercorns
  • 1 Vanilla pod
  • 2 tbsp. Brown sugar optional
  • 4 Kumquat (alternatively orange zest)
  • Blackberries

Preparation

Step 1
Boil quince juice with spices, sweeten with sugar if necessary. Add the sliced kumquat and simmer for about 2 minutes. Add the washed figs to the broth, bring to the boil briefly, turn off the heat and leave to infuse for at least 2 hours or overnight.
Fresh figs (large)
ml Quince juice
sprigs Rosemary
Black peppercorns
Vanilla pod
tbsp. Brown sugar optional
Kumquat (alternatively orange zest)
Step 2
Add the blackberries about 2 hours before serving. Remove the figs from the broth and serve with vanilla ice cream or whipped cream and some of the broth. Milk rice also goes very well with it.
