Quick Chili with or without Meat

Ingredients

  • For the chili:
  • 1 Onion
  • 1 Garlic, large
  • 2 tbsp. Olive oil
  • 1 Fresh chili pepper
  • 500 g Minced meat, alternatively veggie option
  • 1 Salt
  • 1 cans Kidney beans
  • 1 cans Corn
  • 1.5 tsp. Paprika powder, sweet
  • 50 g Tomato paste
  • 2 Strained tomatoes (800gr)
  • Salt and pepper
  • 1 Sugar
  • For garnishing:
  • Tabasco Pepper sauce
  • Crème Fraîche
  • Fresh Parsley or coriander
  • Fluffy rice, nachos or fresh white bread

Preparation

Step 1
For the chili: Peel and finely dice the onion and garlic. Heat oil in a large pot or casserole dish and sauté the diced vegetables. Meanwhile, wash the chili pepper, dice it finely and add it.

Then add the minced meat and fry until crumbly. Alternatively, prepare the veggie version according to the instructions on the packet and add it to the pot. Sprinkle a generous pinch of salt over it.

Drain the corn and kidney beans and set aside. Add 1-2 teaspoons of paprika powder and 50 g of tomato paste to the minced meat and fry both briefly.

Then add the strained tomatoes, kidney beans and corn and season to taste with pepper, salt and sugar. Cover the chili con carne and simmer for about 20 minutes on a medium heat.

For garnishing: To serve, garnish the chili with Tabasco, crème fraîche, parsley or coriander as desired. This goes well with fluffy rice, nachos or fresh white bread. Enjoy!
