Cut the white part of the spring onions into pieces approx. 5 cm long.
Finely slice the green of the spring onions lengthways and leave to stand in iced water.
Peel some of the ginger and cut into fine stripes. Keep the rest for the sauce.

Clean the fish, remove the scales and pat dry if necessary.
Score the flesh parallel to the head at equal intervals and salt both sides.
Stuff the fish belly with ginger, spring onions and garlic.
Place the whole fish on a plate in the steamer and steam on a high setting for approx. 12-15 mins.

For the sauce, grate a clove of garlic and the remaining ginger and bring to the boil with water, soy sauce and sugar.
