Step 1
Pierce the sweet potatoes all over with a fork. Place them in the basket of the hot air fryer and cook twice with the vegetable function for a total cooking time of 36 minutes.
For the shepherd’s salad, quarter the pepper, remove the stem and seeds and cut into cubes. Peel and halve the onion and cut into strips, slice the olives, cut the feta cheese into small pieces and finely chop the chives. Mix everything in a bowl and season with salt, the juice of half a lime, salt, pepper and a little olive oil.

To make the guacamole, cut the avocado in half, remove the pit and scoop out the flesh with a spoon. Mash with a fork and season with salt, pepper and the juice of the remaining half of the lime.
Slice the sweet potatoes lengthways, press together slightly, fill with the guacamole and arrange on top of the shepherd’s salad.
