Marinated scallops and octopus on a lemon skewer with Thai basil and chili

  • For the scallops and octopus:
  • 8 Scallops (fresh or defrosted)
  • 2 Octopus' arms (cooked and as a whole arm)
  • 4 stalks Lemongrass (cut diagonally into 20-25 cm pieces)
  • For the marinade:
  • 2 tbsp. Olive oil
  • OrangeJuice and zest of 1 orange
  • 1 Red chilies (depending on desired heat), finely chopped
  • handful Of fresh Thai basil, roughly chopped
  • Salt and pepper
  • As decoration:
  • Lime wedges and Thai basil

Preparation

Step 1
Mix the olive oil, orange juice, orange zest, chopped chili, Thai basil, salt and pepper in a bowl. Cut the octopus arms into 2-4 pieces, depending on their length. Add the octopus pieces and mix well. Leave to marinate for at least 30 minutes.

handful Of fresh Thai basil, roughly chopped
Step 2
Carefully place the scallops in the marinade and only marinate for about 5-10 minutes. This will prevent them from becoming too soft.
Scallops (fresh or defrosted)
Step 3
Alternate the marinated octopus pieces and the briefly marinated scallops on the lemongrass stalks.

Step 4
Preheat the grill. Place the skewers on the WMF table grill and grill for about 3-4 minutes on each side until the scallops are lightly browned and the octopus is warm.
Step 5
Arrange the skewers on a serving plate and serve with fresh lime wedges and fresh Thai basil, if desired.
