Classic Crispy Smash Burger with Cheese

Recipe for Plancha BBQs

Ingredients

4 People
  • 600 g Ground beef (ideally 20% fat content)
  • 4 Burger buns (brioche, optionally with sesame)
  • Salt, pepper
  • 8 slices Cheddar or American cheese
  • 1 Red onion
  • 2 Tomatoes
  • 0.5 Iceberg lettuce
  • 4 Pickles
  • 2 tbsp. Oil
  • 4 tbsp. Mayonnaise for spreading

Preparation

Step 1
Peel onions and slice them from the root base to the tip. Mix salt, pepper, and oil in a small bowl, set aside and use later. Divide meat into equally weighted balls (about 75 g each) using two burger patties, do not knead or pre-shape! Then prepare individual patties.

Step 2
Preheat the WMF Plancha on the highest setting for 5-10 minutes until it is really hot. The Plancha should be as hot as possible – a drop of water should evaporate immediately when it hits the surface. Place meat balls on the hot Plancha and immediately flatten them with a sturdy Plancha spatula or a burger smasher – the flatter they are, the crispier the edges will be. Cook the patties for only 1-2 minutes on the first side.
Step 3
Flip the patties and immediately place the cheese slices on top to let them melt with the residual heat of the meat. Cook the second side for only about 45-60 seconds. This creates a medium patty with a crispy crust. Optionally, briefly toast a burger bun and immediately spread the toasted side with the spice mixture and mayo and firmly connect it with the patty to fix the roasting flavor.

Step 4
Now arrange the onion, tomatoes, and the lettuce/pickle/cucumber one after the other, from the sauce sides outward. Spread ketchup and mustard on the bottom side on the smashed patty. Then assemble the burger, drizzle the spiced oil on the lid, and serve immediately.
